Glass cookies 玻璃曲奇

這曲奇原來我只是在2010年做過幾次便沒再做了, 上星期朋友說很懷念那個可愛的曲奇, 問我要食譜, 令我又想再投入baking的世界了~~因為朋友英文人, 所以為她翻譯了本來是中文的食譜




Makes about 30 pieces

Ingredients:
Butter 100g
Icing sugar 80g
One egg (original recipe was 1 egg yolk, but I thought it’s too dry so I added the egg white too)
Flour 200g
Fox candy or other hard candy


Method:
1. Let butter and egg back to room temperature.  Sift floor.
2. Beat the butter till it’s soft.  Add icing sugar bit by bit.  (about 2-3 times)
3. Add egg / egg yolk, keep beating
4. Add flour bit by bit (about 2-3 times), mix it all together
5. The dough will be like a bit loose, put them into a zip lock bag
6. Use rolling pin to flatten it. 
7. Put the finished dough into the fridge for about 30 minutes.
8. Take out the dough.  Roll it flat.  Use molds to cut out the shapes, and smaller one to cut the hole inside.
9. Crush candies into smaller pieces.  Put the crushed candies into the holes.  Better to place on non-sticky silicon mat.
10. Pre-heat the oven at 175 degrees.  Bake the cookies in the oven for 15-20 minutes.

11. Can eat after cooling down!!
